Providence 2015

Seasonal Conditions

This is regarded as one of the best vintages in decades. Despite very dry conditions in the growing season, the vines had adequate water reserves in the subsoil to allow for low yields of high quality berries. Milder summer temperatures and cooling breezes allowed for slow, even ripening and grapes of superlative quality resulted in wines with deep colours and intense yet fresh flavours.

Tasting Notes

A brilliant, bright wine with fresh, red plum colours. Its displays complex aromas of mulberries, blackberries and black cherries but also shows red cranberries, cloves, nutmeg and a hint of pepper. The tannins are soft and extremely silky. This wine can be enjoyed now, with further ageing beneficial.

Viticulture

A Rhône style blend, all cultivars are from low yielding, dry land vines resulting in concentrated colours and flavours.

Viniculture

A Rhône style blend of Syrah, Cinsault and Carignan, the best fruit from each vineyard was selected and all cultivars were fermented separately. The grapes were cold soaked prior to fermentation, extracting colour early. Fermentation was in open fermenters with three punch downs a day. To respect the flavours of the fruits, only 30% of the wine was aged in new French oak. The wine was bottled in November 2016.

Strictly limited production of 4700 bottles.

Serving suggestions

An outstanding combination when paired with brandy flambéed mature beef fillet and creamy Madagascan green peppercorn sauce. Also excellent with pork medallions, lamb, venison or grilled tuna. Delicious with dark chocolate nougat and ideal with mature, nutty cheese.
