Tasting Notes
The delicate, light cherry blossom pink colour is a distinctive feature. The bouquet is vibrant with bursts of red fruit, notably red currant, watermelon and rose petal aromas. These fruity aromas and floral notes give the wine an elegant and refined quality on the nose. The spicy undertones enhance the complexity of the aromas. A fresh and well balanced rosé with a clean acidity to its sophisticated palate.
Viticulture
A blend of four red grape varietals, one from a Certified Heritage Vineyard. All cultivars are from drylands vines.
Viniculture
A blend of Old Vine Cinsault, Carignan, Grenache Noir and Shiraz. All the grapes were picked in the early morning, on the same day and the grapes were cooled for 24 hours to 13°C and crushed together. The skins spent an hour in the press before pressing to extract colour and aromas. The lees were settled for 3 days and the clear juice was racked and inoculated with a Rhône yeast strain. The fermentation took around 18 days and the temperature was kept between 14° C to 17°C. The wine was then aged on the fine lees for 6 months. It was bottled in January 2025.
